125g SR flour
3 tbspn blackberry coulis
For the icing:
150g pot mascapone
3 tsbp blackberry coulis,
400g icing sugar
Put all of the cake ingredients, apart from the coulis, in a food mixer and mix.
Add the coulis and mix in.
Prepare a muffin tin with 12 cases, and preheat the oven to 180 (140 fan) C.
Spoon the mixure into the case and cook for 15 minutes.
Allow to cool.
Mix the icing ingredients together, then pipe onto the cooled cakes.
