candied orange peel
Cut the oranges into quarters and peel. Alternatively, save peel from eating oranges
in the freezer until you have enough.
Boil the peel for two hours.
Drain and weight the peel, and add the same amount of sugar and cover with just enough
water. Boil for one hour. Leave overnight
Boil until almost all the syrup has gone. Place on a rack and dry, preferably in
a warming oven, until dry.
Slice as required, store in an airtight container.
