Sweetcorn relish


2 large onions diced

6 sticks celery diced small

1 litre malt vinegar ( or whtei vinegar if you prefer a paler colour)

100g sugar

4 tsp mustard seeds

3tsp salt

1/2 tsp grd allspice

2 red peppers dcied in

6 cobs of corn ~ 2 kg - de kernelled

2 dspn  of crnflour mixed in water

Put the onions, celery, vinegar, sugar, mustard seeds, salt and all spice in a pan and simmer until sugar is dissolved and vegetables soft.


Add the diced red pepper and the sweetcorn kernels. Cook for a further 10-15 minutes.  Then stir in the corn flour mix and simmer for a few more minutes.


Store in the fridge, use within 3 months
