4oz demerara sugar

4oz golden syrup

40z butter

8 oz oats

Melt the sugar syrup and butter together in a pan, gently, until the sugar has dissolved.

 

Preheat the oven to 180C / 160C fan, and grease or line a 9” square cake tin.

 

When the  sugar mixture is ready stir in the oats, then pile the mixture into the tine, spread out evenly and bake for 20 minutes or until golden brown.

Allow to cool before cutting.

 

Variations:

 

Mincemeat

 

Add 1 tbsp mincemeat when stirring in the oats

 

Apple and cinnamon

 

Add 3 oz of peeled chopped apples, ½ tsp cinnamon and a further 2 oz of oats at the oat mixing stage.

 

Seedy

 

Add 2 oz each of pumpkin seeds and sesame seeds when stirring in the oats

 

Cranberry

 

Add 3 oz of dried cranberries when mixing in the oats

 

Yuletide

 

Add 1oz each of dried cranberries, chopped dried dates and chopped dried figs to the oats.
