1 kg rhubarb, chopped (frozen is ok)
150 ml water
Approx 500g of sugar
Combine the rhubarb in a saucepan and cover.
Simmer for about an hour, until the rhubarb has broken down.
Strain using a jelly bag overnight.
Measure the resulting liquid and add 700g of sugar for every litre of juice.
Combine juice and sugar and heat gently until all the sugar has dissolved.
Bottle and keep in the fridge. Serve with water, sparkling water or top up with
